A traditional Bulgarian white cheese in brine, made from high-quality cow's milk. It is distinguished by a pleasantly salty, mildly tangy flavour and a crumbly texture. It is an absolutely indispensable ingredient for authentic shopska salad, works wonderfully for baking, in pastries (such as Bulgarian banitsa) or simply to season fresh vegetables.
